Chef/Partner Erick Nixon
Born in San Angelo in west Texas, Erick Nixon spent much of his early years in the country fishing and hunting wild game. Growing up with a large family that spent a lot of time together, he learned to appreciate both the hospitality and the country cooking of the south. Something in the regional preparations of his relatives sparked an interest in food preparation and a curiosity about different cuisines that continues today. By fifteen he was working in a small restaurant owned by a family friend. Nearing the completion of high school, he was asked if he had ever considered attending culinary school. Erick relates that at that time he didn’t even know what culinary meant. But a nerve had been struck, and in no time he had moved to Austin and enrolled at the Texas Culinary Academy.
While matriculating at TCA, Erick took a job at SFUZZI’S, his first professional kitchen. Falling in love with Italian food, he spent five years with the company, working his way through the ranks from pantry to Executive Chef in both Austin and Dallas. Intrigued with the Cajun and Creole creations he had tried while visiting New Orleans, Erick then moved to the Big Easy where he celebrated the birth of his son, Cosmo. After two years of Sous Cheffing and childraising in New Orleans, he decided to return to Austin, where he found himself at the helm of The Granite Café for three years, combining his country boy style with a natural flair for Southwestern cooking. Next he joined with Will Packwood to open Emilia’s, a five star restaurant in Austin with a contemporary French menu and service standards to match. After two years of high profile praise and national press recognition at Emilia’s, Erick returned to his first love, the Italian kitchen, joining Mezzaluna Cucina Italiana in Austin as Executive Chef where he spent three years cooking, teaching and creating Tuscan food.
Recruited by Fleming’s Prime Steakhouse & Wine Bar , a national steakhouse chain headquartered in Newport Beach, California to be their local Chef-Partner in Austin, Erick now has a capital investment in that company. Fleming’s presents a contemporary iteration of the classic steakhouse, serving prime beef and fresh seafood as well as creative salads and sides and one hundred wines by the glass. Besides his son Cosmo, Erick has a baby girl named Chloe and a beautiful wife named Billie. After almost twenty years, he’s doing what he’s always loved – cooking – and still enjoying it.
